Answer as I know it from friend of mine who is working with Kaspersky firm:
There is no way to change the folder where Kaspersky download its latest updates for virus definition.
Folder updates place is in here: C:\Documents and Settings\All Users\Application Data\Kaspersky Lab\AVP6\Bases
One friend from faronics Firm said regarding Kaspersky and Deep freeze working together and to obtain updates:
The process of updating virus definitions on workstations protected by Deep Freeze involves three fundamental steps:
1- Rebooting the workstations into a Thawed state so the updates are kept upon restart
2- Updating the virus definitions
3- Shutting down or restarting the workstation into a Frozen state
