Installing more than the Anti-Virus portion of SEP on a server is a bad idea, unless you test the NTP policy first in a non-production environment, for EACH server that you want to run it on. I don't think you can create ONE policy for ALL your servers, since they all do different things, and some network services, protocols, etc. you want ON, others you want OFF - all based on the purpose of the server.
Get a good firewall for your servers, leave the full SEP install for the workstations. Create a custom install package, with only AV, for the servers. Its a form of dual protection, good internal threat protection from the users with SEP NTP, good external protection for servers and network with a hardware-based firewall. I highly recommend the NSA-Series from SonicWALL.
I think Deltek Accounting software and SEP have issues installed together, with NTP enabled...
