Setup IM at local office but prevent IM to leave local network

Hi experts. I need to configure an instant messaging client at a local office but the owner does not want the IM traffic to leave the local network or have IM traffic come in. Given that, what client would you suggest and provide how I can prevent the traffic from leaving the network (drop traffic on the firewall, but what ports, etc.)
