Personally, I think spying on your kids might just create problems in the long run. When your kids find out that you're spying on them - the trust is gone.

But of course if you think they might be in danger or for some reason it makes you feel overwhelmingly concerned about their safety or whatever reason you have.

We have used Capsa http://www.colasoft.com/capsa/ for network sniffing and monitoring web browsing.  In addition to the normal packet capture it will grab emails, chat, web sites visited, FTP, etc.
You do not need to know how to read packet data to understand the captured data.
This would be run on an seperate PC that can see the data going over your network connection.   We keep a hub between the router and the restof the network.  This allows us to connect a laptop and capture the traffic without disrupting the network.

Sorry I was assuming you kids are using MSN.
Here is another on for msn:

http://download.cnet.com/MSN-Chat-Monitor-Sniffer/3000-2144_4-10386204.html

The other way you can do it is just use a keylogger,  This will record any inputs typed into the computer. Although you will only see what your kids type, no response from other users.

if you don't trust your kids to use the internet, don't let them use it. Or only let them use it with you watching what they're doing.
Whatever software you install to spy on them, they'll find and disable it more rapidly than you can keep up with.
