Spam Assassin Server Wide settings and Training

I'm running Spam Assassin and Plesk on my Media Temple hosted linux server.

Can someone tell me the best way to run Spam Assassin to fight spam for my clients?

Is there a way to set server wide settings on all email addresses?

MORE IMPORTANTLY.
