Also once the above has been setup i.e. SMTP will already be open on your exchange server so just enable and setup IMAP and Webdav then follow this article to setup mail on the client:

IMAC setup for retrieval of Microsoft Exchange 2003 Email remotely
We have a user that has a new IMAC OS X and he would like to have his microsoft exchange email (2003) on his IMAC without using Entourage... he says it is built into the MAC os 1) what would you use to access his email via the IMAC and 2) what are the exact steps on the IMAC to do this - I am not MAC savy..

OK you can use Exchange 2003 with Apple Mail you have to enable the following:
IMAP, SMTP, and DAV enabled on the exchange server
Are you planning to upgrade to Exchange 2007 at any point soon? If your user has MAC OSX Snow Leopard then Exchange 2007 works out of the box with this version of OS
