I don't think that its possible!!! the only closest match I can think of is to remove the mailbox association of that particular user, and when the user comes back, link it back to his/her account.

Thanks for everyones response but I think i found out a way using AD. Under "Delivery restrictions" there is a "to only accept emails from so and so". I just put the users account as the only account to accept email from and thereby keep the email account open and ready to use when the user comes back from vacation in this case. Thanks for everyones input!

maybe change the mailbox size limit to 0 so they can't recieve anything?
