Can you setup Exchange server to only allow emails from Blackspider but still use iphones/thunderbird?

Hi
We currently use Exchange 2003 for our email server. In the past we have used Policy Patrol to control spam etc, but have just changed over to Blackspider.
I have set our SMTP connection to only allow emails from the websense servers but now have hit a snag with using things like thunderbird and the iphone.
We now get an error message saying we cannot connect to the smtp service... I have spent most of the day trying to work out a way around this, but have hit a mental block.

Can anyone tell me if there is a way to have both the emails resticted to websense, but still use thunderbird and iphones?
