Email Filtering Server

I am looking to create an email server that will perform virus scan on emails and then forward the email to the appropriate server. I am not sure which software to use to do this. Someone mentioned linux as the email filter, but I don't have a lot of experience with it.
Anyway, I am hosting multiple email servers running Exchange 2003 that store emails for multiple companies. Any suggestions are appreciated.
