i'm developing a Java B2B application where the requester (client application) will send me a message to provide me the "HTTP user agent" and "HTTP Accept Header" for the customer's user agent and accept header at the browser. I need to validate this two set of information to make sure my web application can support this and then reply to the requester before the requester can redirect to my web page. So, would like to check what and how should i do with this two kind of information.

Why do you think the Accept header will be better? It isn't really clear what you are trying to match on or what you can or can't support. I know that you mentioned those 2 headers but if you don't have a list of "supported browsers" then what is it you use? Or what is it you can support?
The Accept header seems odd to use for a determination of if YOU can support it. That header is usually used the other way. In other words a browser or something making the request uses it to say what they can accept. So unless your app is actually sending some type of unique response (i.e. not something text/html or like it) then I don't really see how the Accept will help or be better.
