Any software you'll use will just be an aproximation of the audio tracks, since tracks are not separated into a mp3 audio file. Using different filters one can extract the voice and the instrumental part, but never exactly as it was.
For a audio editor software, Audacity is one of the best, download it from audacity.sourceforge.net
If you want a totally clean instrumental track, then you will have to have the acapella of the track as well. Then you will have to align them exactly along eachother. Invert the phase and the acapella track will cancel the vocals in the original track.
Probably the easiest way is to see if there is an instrumental version on the web somewhere. Otherwise you can check for some site's that offer acapella's.

I suppose what you want is a kind of "karaoke" program. There are a lot of them all over internet... but all of them, or almost, to pay for...:(
Do some search for "karaoke free"... maybe you can find some...
This kind of programs takes off the vocals. You can't get the vocals separate, just take them out of the instrumentals. If you want them separate, then you must follow Rineau's hint, i.e., get them separate... If you want "just the instrumentals" as you wrote, then maybe this will do the trick.
