Thanks markbyrn. Another I found to stop updates was to go to the installed path, for me it was: C:\Program Files\Adobe\Acrobat 8.0\Acrobat\plug_ins and rename Updater.api. Your way is easier though.

Choose Help > Check For Updates.
It will check for updates and when it responds with, "There are no updates available at this time", click Preferences instead of Quit.
Uncheck Automatically Check For Adobe Updates and applications to update. Click Ok.
