Convert DVD collection ripped onto harddisk - Convert to H264 XVid / Divx - Quick Way?

I've ripped most of my dvds in vob format to my hardisk (Any DVD / DVD Shrink) and love the easiness of playing them through media center. Thew only problem is reality has hit in and i dont have unlimited disk space.
Two questions :

1. How can i batch convert lots of DVD Vob in folders to a digital format - I've used the DVD Fab option but it takes hours. Is there hardware i can buy so the conversion is quick? Dont want to wait  4 hours per film !

2. MKV / H264 / XVid / Divx etc. Once i start i'm not going to change formats! so please advise the best format going forward that will allow for DVD quality and future HD. I want to be able to keep subtitles if possible not not fussed with menu options.
