Because of the way the system is set up, the most important variable in this equation is you. Problem with fonts in Outlook 2003

I have a PC running Windows XP service pac2 with Microsoft Office 2003. When I create a signiture in Outlook the font color does not show up (regardless of the color I choose) in the New Mail Message. It looks as if it is a negative, It will show up as blue when highlighted but otherwise looks light yellow. Also when I hit the enter key it seems to double space the lines. Can you help me resolve the issues?
