Outlook Move All Email from Local Exchange Server

I'm wanting to route all my email from users of my local exchange server (or alternatively, my local mail domain) into a single folder in Outlook.  I *had* figured it out once before, but I accidentally removed it by logging into exchange with and Outlook 2000 client.  Anyone have an recommendations on how to do this?
