The user's mailbox is not big, about 300Mb. I haven't deleted the OST file as of yet actually, but I have already re-created the user's network and Outlook profile (in another unrelated issue), so the OST file is fairly fresh, I'd say about a week old.
Let me just delete the current OST file and re-enable cached mode and get back to you.

Sounds like an issue with the ost file, it's not allowing changes to the folders that are in it. What happens if you disable the cached mode, delete the ost file and then re-enable cached mode?
How big is the user's mailbox? If it's quite large then corruption of ost files is quite likely.
The ost file is just a copy of the server mailbox so you'll not loose any data by removing it. (just rename it or copy it away if you're too worried)
