Oh sweeeet JOrzech... that was it! Well, it wasnt exactly it but it was just the next tab over called "AutoFormat As You Type" instead of "AutoCorrect". Close enough for a cigar though... thanks a million!

Can't get Bullets and other features to work in Outlook 2007
Hey guys, I've had this problem before and I can't remember what I did to fix it. When I compose a new email in Outlook 2007 Pro I can usually type an asterisk and it will turn into a bullet. Then it will begin to bullet my email as I type items. My signature file also doesn't show my website as a hyperlink. It's almost as if my emails are in Plain Text but I do in fact have HTML clicked. I seem to remember going somewhere unexpected and clicked a box somewhere when this happened before... but I don't think it was under Tools/Options. It's almost as if Microsoft doesn't want me to enjoy my Outlook. This is a newly installed Office 2007 Pro on Windows 7 Ultimate x64.

Ok - Try this.... Home, Editor Options, Proofing, AutoCorrect Options, and under AutoFormat, and AutoFormat as you Type, make sure Automatic Bulleted List is selected on both.
