Microsoft Critical and Security Patches Smashing Outlook Profiles

Hi Experts,

I have a rather annoying problem occuring on our Network at present.
We have our Microsoft updates (Security & Critical only) being applied through WSUS via a GPO

Whenever these updates are applied to all our Windows XP clients  it overwrites the users Outlook (2003) profile with a new one.  

Here's what happens:
It removes the links to their Signature Blocks (files are still there but sets the Signature block settings back to <none> and Strips additional Personal Folders and Mailboxes, which then need to be re added, a new ost file is also created.

We do use a prf file to configure outlook clients on first use.

Has anyone seen this occur before or can anyone shed some light on this.  With the number and frequency of Patches released by Microsoft these days this is becoming quiet frustrating.
