Outlook 2003/07 How to send appointment items with categories attached (For colour coding)

We would like to colour code our calendars so meetings relating to different tasks appear in different colours. Using colour tagging or categories this can be done however whenever we invite others in the office to attend the meeting the categories are lost as are the colour tags.
