Can we manipulate From field in email?

Hi,

on clicking <Send> button, an email is sent to the approver for approval.
The sender is the person who clicks the <Send> button. I've tried to change the From field but to no avail. However, I can change the display name.

I find it logical that mail is sent from the person who clicks the <Send> button. However, the user wants to send the email from another person instead. Can this be done?
