say you have phone# in column a, then in another column(e.g. in B) anter formula:
=SUBSTITUTE(A1;"-";"")
Then if you don't want to keep the origina column with the hypens, do: select the new column, right-click, copy, then right-click column A, paste special, values. Then remove the aux column.
