How do I change date to next date?
When I do it manually, the second date is repeated when I copy and paste.

A1 would show the day of the week of the date in cell B1
I know that I can use a formula to calculate the day of the week of the date in B1, but I'm not sure how to generate a list of dates on every other line.
Any ideas?

Put the date in cell B1. Link A1 to B1 and format cell A1 as "dddddd" (Ctrl+1/Number/Custom) so the actual day is shown.
If I have interpretated your question correctly you also want to leave a blank row between the next date. Copy A1:B1 and paste into A3:B3 and change date to next. Then select A1:B4 and drag down as far as required.
