Average Calculation pt 2

I would like a pivot table created (like the one done in my last post) for the spreadsheet that I have attached.  This one is the same as the last one, except it doesn't have the Ethnicity values in, yet.  Would it be possible to have the Ethnicity drop down box in there so when I do get those values I just put them in and they would show up on the pivot table?
