Printing white/black from Ms Access 2003

I have a print server running windows server 2000 SP4. On the server the network printer is configured as white/black.

From the clients (Windows XP SP2), once you have configured the driver on it to white and black, Word 2003, Excel 2003 and powerpoint 2003 when you go to print any document by default is in white/black but with Access 2003 by default is Color. I must change it to white/black and no problem but if I close the access 2003 and I open it again I have the same problem. (For security permissions not all users can print in color)

Do you know how set up it from access 2003 for printing in white/black always.
