I saw a recent solution to create an administrative installation point by copying the files from the CD to a network share. This is useless because there is no .msi file to attach to your GPO. Then old process was: use a volume license CD, click start, run, type setup.exe /a. This no longer works. Is there a certain version I need for this now or is it just not available any more?

I think you are right. The only article I was able to find on Technet indicated that you would point your GPO at Enterprise.WW\EnterpriseWW

I checked with Microsoft on this issue and Retail deployments are not supported. While it may be possible to push them out with group policy, there is no way to create a customization file for a retail install of this type.
You will also see issues where an activation needs to happen, where a volume license will not request each copy to be activated

Thanks for the info Derek but I was already aware of that. I am using a volume license to create my deployment package which is perfectly acceptable. With volume licenses there is no issue with activation. The problem here is the Pro license no longer has the MSI files you need to deploy nor will it allow you to extract them from the EXE.
The answer is you need to purchase a volume license for Microsoft Office Enterprise 2007 which actually includes everything Pro has. Enterprise also includes Groove. In any event, the Enterprise license has the necessary MSI file you need to use with your GPO so if you plan to deploy using group policy, purchase Enterprise.

I believe Office 2007 Enterprise or Ultimate will allow deployment. You can create a network installation point, ie. copy the CD to a network share and run the setup from the share... this will allow you to do a CD free install.
I will see what I can find about deploying office 2007 and post again soon
