How do I send an out of office email to ONE person only

Hi,
I have a fairly annoying and unprofitable customer I am keen on getting rid of.
I would like to start this process by making myself unavailable - to HIM only.
I would like him to receive a pre-specified out of office email every times he emails me, but I would like others to see me as in the office. Business as usual.
It would be important to me that the email they receive contains the out of office icon rather than the email icon.
I am open to using third party software to accomplish this.
