Yep, it still removes the XML tags.
Is there another program i could use to edit the document and preserve the XML tags??, i just dont want to have to keep turning on a VM every time i want to edit the document

but wikipedia says
- Office 2007 was released January 30, 2007
-- Office 2007 Service Pack 1 was released on December 11, 2007
--- Service Pack 2 was released on April 28, 2009
Therefore you could use Office 2007 SP2 and should have custom XML.
The idea is that Office 2007 should run without the need for a VM.
After that there is no other option.

.DOCX, .DOCM and .XML files are the file types that are affected. .DOC, the default format for 2003 is not affected.
and also:
All versions of Word sold by Microsoft in the US after January 10, 2010 (not just English) will remove custom XML markup when opening files.

I think you could stop Office from autoupdate, as with windows, or you could select every update to be installed except this one, and Office 2007 Service Pack 3
