yes, if you insert a section break, the header on the page after the break will be marked 'same as previous', which you can remove on the toolbar. Then the pages that folloe will have a different header.
So, you'll need a section break after every page

Yes, but why? And what for? I sometimes have probelms tracking all section breaks like that, if document is 'live' and might well begin to add words beneath current end-of page.

Two things I'll do to make sense.

First, I often wil do the even/odd choice, where I can get double sided output printed one way or another. That keeps things like page number in a corner, same corner, every page.

Where I want something like Chapter heading that changes, that may be a known option, but look at how Word inseerts page numbers. For the headers (or footers) you can insert another variable, which can change from one page to another. This can be the latest topic, for example.

Section headings I find more useful for page groups, such as, beginning with no page numbers, then flipping to a romanized numeric, then to traditional decimal. This will be retained for the even/off effect, and may be ignored for the first page effect.

It can also work for having a series of Foreward, Chap 1, Chap 2, Chap 3, ... Appendix, Index as being different words in header, where the middle part is more normal increment of headings, but others may not be same format of font choice or whatever, maybe making use of Italics. It works better when choice is also made to make word or phrase part of Contents, or TOC, but those may too warrant some different font/format treatment within, but still I see no reason to do each page individually, especially when subject to further edit.  I'd stick to sectioning a group of pages by topic or subheading, begin with <new-page> but let the bottom grow and keep or retain the former heading info.

What if the document is already created and contains 180 pages? Will the break insert a blank page every other page?
