I know you can bring up Word 2007's Language menu by right-clicking a misspelled word, and then you have the option of turning off spell check for a selection. But if you do turn off spell checking this way how do you ever turn it back on? Since no words are ever flagged as misspelled, there's no misspelled word to right-click and get the Language menu back.

This doesn't seem to be what I'm looking for. I don't want to edit the word list of a particular dictionary. I want enable spell checking for the selected text, as in the figure below. The question is, how do you get this menu to come up without clicking a misspelled word?
Word's Language menu
Try this:
Office Button>Word Options>Proofing>
Under - When correcting spelling and grammar in Word:
Select "Check spelling as you type" - See attached screen shot.
Also - if you are just trying to do this without a mouse (keyboard only), then you can move the cursor onto the text and then use the windows key on the right side of the keyboard (mine looks like a drop-down list with a cursor) and this is the same thing as "right clicking". It brings up the menu and then I can navigate it with the arrow keys and enter to select things (like the language box you have above).

No, that's not what I want. "Check spelling as you type" turns the "check spell as you type" function on or off. It's not tied to any selected code.
Ok, I found it! Set Language is in the Ribbon under Review. You can select any amount of text and turn spelling on or off specifically for that selection.

Hello. Click on the Microsoft Office Button (upper left hand corner, next to save). At the bottom of that window, select word options. In the left pane of that window, select "Proofing". There is "custom dictionary". This brings up "Custom Dictionaries" and you can "Edit Word List" in there.
