How can I get Word 2007 to insert page numbers only on these pages with text and keep the sequence going without putting page numbers on blank pages?
Possible?

Select 'Different odd and even pages' in Page Setup.
In the ddd page header (or footer) use a Formula field with a nested Page field. with field codes showing (Alt + F9 toggle) , it should look like this:
{ = ({ Page } + 1) /2 }
Note that the curly bracket pairs must be entered as a part of field insertion or with Ctrl+F9
