You will run into some problems just as one who say knows Spanish is suddenly found working for a tire company like I did.
The software vocabulary if it is specialized must then be learned buy the software package, otherwise it is worthless. One person would have to be dedicated in using the software.
The software has to have the ability of learning the person's voice print.

There are a few companies that can offer this service on the internet.
DragonSpeaks being just one of them. I've used speech to text before (some years ago now), and at that point it wasn't all that accurate. I'm sure technology will have progressed now though.
I'd suggest you email around a few companies. Get some quotes/pricing on this, and explain what you are trying to do. They will be able to tell you straight up whether what you are trying to do is feasible (I'm sure to an extent it will be)
