Going to be somewhat difficult because Project will not let you schedule down to the minute. Meaning if you wanted to create a task for the flight. You can set up recurrence but you cant say it recurs every Monday at 3:12 PM.
I think one way to incorporate the flight schedule into your view is to establish the flight as a recurring task based on the schedule. I have attaached an example below that shows what I mean. But the level of detail here can only get to the frequency. My pictures shows a flight every M, W, F lasting 1 hour but it defaults to the earliest available slot for that day. I will try to see if there is a way to give it a specifc time for recurrence like you can do with outlook meetings.
If you put the recurring tasks based on the flight schedule then you can simplyt assign a resource to that flight as a task assignment.

Couldn't understand the question properly, but in project 2007 it is possible to create exceptions so that scheduling is avoided during exception days.
Can you please elaborate more?
