Thanks. The InDesign solution works well and, coupled with the Acrobat process, I see how to make the rectangle invisible.
The Acrobat solution in itself, simply attaches the PDF to an email, but doesn't actually fill in the email address. Still, this response provides a great solution and advances my skill set another level deeper. Adobe CS3 just keeps getting deeper.

In Acrobat: om
Show the advanced editing toolbar (View menu > Toolbars)
Select the link tool. Drag a rectangle around your link area.
Link Action: Custom Link, click next button
Actions tab;
Add the execute a menu item, click add
Select the File > Attach to email
Click OK 2x to close all dialogs
To test it, switch to the hand or pointer tool.
In InDesign:
Highlight some text;
Show the hyperlinks panel (Window menu > Interactive > Hyperlinks)
Click the new hyperlink button at the bottom (looks like a post-it)
Change the destination type to URL;
In the URL box type mailto:myemail@mywebsite.c
If you export to PDF you need to check the include hyperlinks option
