As for your second question - I started learning LaTeX, when I had to write some 'bigger' document - this is the best way to learn something :)
Of course, I had to start with some basics - for that purpose I used "Not So Short Introduction to LaTeX2e" which is available here: http://tobi.oetiker.ch/lsh
And - of course - internet :) If I don't know something (a lot ;)) - I run google and search for this.

It is centered. It doesn't look like centered because of your odd/evenmargin and textwidth settings. =1in,top=0 in,bottom= 0in]{geome try}
Increase you \textwidth to ie. 9 inches and it will look 'more centered' ;). If you want accurate setting without manual calculations of textwidth, I would suggest to use geometry package to set margins:
\usepackage[left=1in,right
in your preambule.
