Editing Text which has a rasterized mask/filter or was converted to 'paths'

* First, thank you so much for your help.
* This product is Illustrator CS3.
* I am a first time user.

* I am recreating portions of text from scratch on lots of documents (copy is mostly brochures, bulletins, etc), but would rather just edit it (usually it's a simple date change).
* Unfortunately, all I have is PDFs, and no other format was saved, from the original.
* I open the PDF, and quite often, the part of the text I want to edit cannot be selected properly (it appears to have a rasterization effect, or has been changed to 'paths', or something of that nature).
* On rare occasions, I can simply select it, and then edit it, but usually, I just have to recreate the whole text area, guessing on the font properties and characteristics.

* I am very generous with points, and will give you full points if you give me some things to check which allow me to edit the text.
* If you feel that there is no way for me to return the text to an editable state, I would prefer that you provide me with some hyperlink references on this, from webpage I can read and learn more about this.
