Trouble drawing curves with pen tool in Photoshop

I got a great answer to this earlier today which helped a lot but I'm still having trouble srawing curves with the pen tool in Photoshop.  Please take a look at the attached image and tell me how to keep adjacent sections of a multifaceted pen tool design INDIVIDUALLY modifiable?

Delete the existing line and start a new one. The aim is to use the least amount of points you can. Usually this can be done with points in the corners and on the apex's of any curves.

Begin with a point at the corner underneath the right ear with a single click (no dragging). Next click to add a point AND DRAG until you see the line sit along the bottom of the cows ear.

Next, add a point with a single click to the top corner of the cows ear.

Continue around the cow, getting the line as close as possible to the edge ( it's not important to be perfect at this point).

Adding points with no dragging creates more of a corner point whilst clicking and dragging creates a more curved point.

Once you have gone all the way around, click the starting point to close the shape.

Now select the Direct Selection Tool which is a white arrow (found just below the type tool). You may have to click and hold on the path selection tool (black arrow) to see this. Select the path first, then select a point that is not correct, then drag the handles.

If you have any points that are totally wrong you can click and hold on the pen tool in the tools palette and select the convert point tool (which looks like an upside down V). Then click on any curve point that isn't correct and drag to get as close as possible

and to add; do not create a shape and then add points to make it look like the required shape
instead, "trace" the shape by adding the points and curves on the top of the required shape

Here are a couple of other suggestions:

A) If you have FLASH, import the image into flash and use the TRACE BITMAP function to get a near perfect vector copy of your image. You can then export your vectors from Flash and import them into Photoshop or you can drag the vectors from Flash into Photoshop while holding down the CTRL key. If you choose this option, make sure that you have the arrow tool selected and that you can see the various handlebars for your vectors.

B) If you have illustrator, use the trace image function to generate your vectors.

C)In Photoshop, you can enlarge your image A LOT  and then select the PATH pallet. Click the Trace button to trace the enlarged image and Photoshop will create vectors for you. Unfortunately, Photoshop's tracing function isn't that great, so enlarging your image before you trace it makes for a more accurate set of vectors. Then you use the Transform tool to scale your vectors back down to the original artwork size.

D) Experiment with your keyboard constrain functions when dealing with vectors in Photoshop. For example, if you have a sweeping curve that comes to a sharp point (where the cow ear meets it's head), you can click on the point and hold the mouse button to drag match your curve. Then, release the mouse button and hover over the handlebar on the opposite side of the point you created (probably somehwere around his eyeball). Hold the CONTROL key down and click the handlebar to move JUST that handlebar and point it in the direction you want the next curve to go and release the CTRL key and the mouseButton. The next click of your mouse will automatically be setup with the right curve...

E) with Images like  this cow, only draw half the cow and then, using the SOLID ARROW path tool, select all of the points you have drawn, COPY and PASTE. Then COMMAND T (open Apple T) to open the TRANSFORM tool, right click (ctrl-click on Mac) on the path and select "FLIP HORIZONTAL". Make sure that you have the SOLID ARROW tool selected, then select the two halves and you can use the ALIGN functions from the Top Toolbar. You can also adjust COMBINE modes to ADD the two halves.
