I couldn't find PMS827 listed in any of my Pantone swatches...
Try C36 / M57 / Y79 / K1 - it is a good mix for PMS875 (or add more yellow for a warmer colour)
but will never be as good as spot colour or even better would be foil blocking - depends what you're doing.
Classic Creme? Are your talking stock or colour? To print a cream using Pantone spot colours try PMS1205 but it all depends on what you want to print - best advice is to ask your printer what he (or she) recommends for their press and plate maker and the type of stock they use.

I've had a look at 4645 - as a pantone mix it is very heavy on Transparent White which makes it a lot lighter than 875 and obviously not a gold. What software are you using to set your artwork? It may be that it is defaulting back to the nearest PMS which with your colour libraries turns out to be 4645. I mentioned before that a CYMK gold will never be as good as a spot gold - my printers give me the option of having my process work printed with a 5th or even 6th colour ie gold metalic and a sport varnish if I want - you could ask your printer about this. At the end of the day he will know best, personaly if given the choice I would not attempt to print a process gold - it never looks like the real thing. Sorry if this leaves you as much in the dark as before - give me 10 mins or so and I'll come back with some more CYMK mixes you can try

I'm printing on creme stock
Can i leave the eps on a creme bg, and allow the printers to take it off? Reason being, I have a diminished opacity logo in the page center, over which letters will be printed/typed.
Leaving that area white doesnt show it off like it should. As much for printer proof purposes as anything else.

Glad your 875 is okay - I have got 5 more mixes if you want them ranging from 871 to 8580 but if you've seen 875 and are happy stick with it. I'm just about to head out for lunch but I will be glad to give you any help you need when I get back, a few questions first though:
Why cream stock for a full colour job?
So you are using the logo as a watermark on the printed sheet and at the moment this is an EPS (hopefully 300dpi CYMK at 100%) but you want the printer to knock out the cream? - How much of the artwork can you do yourself - do you have photoshop? Reason I ask is that if someone askes me to correct their artwork I charge more than if I am creating it myself.
If you can give me as much info as poss I will help as much as poss.

using illustrator - i have quark but really dont know much about it besides the help sections
so i've taken the CMYK values for the various spots, and replicated in illustrator
i've done a few print ads, and a brochure, and set those up in illustrator - they came out ok
just this has really thrown me though
so i was sending them an eps (all logos etc are vector based) - so if they wanted to take the
i could send u a jpeg of it if it'd help to explain it more..
dunno - the web makes sense - colors are colors!

I tend to stay away from Illustrator myself - working mainly in Corel, PageMaker or Photoshop, so I won't be able to help you much with that but by all means send your jpg so I can see what you're trying to achieve...
