converting movie clips from DVD to MP3, MPEG or AVI?

I need to create 30 to 60 second clips from DVD movies into a format that can easily be shown from a computer. I need to make an advance "countdown clip" (5, 4, 3, 2, 1) then start the clip. I can get the clip striped out of a DVD, but would then like to insert the countdown clip before it and convert it into a sigle file of some type for ease of playback. I need to keep the original quality as it will be projected onto a large screen TV. Size of the clp is NOT an issue as it will be used locally. Should I convert it to an MPEG, MP3, or AVI? How do I do it?
