A Web server simply serves pages (example: HTML) to your visitors.
Think of an application server as the "brains". It interprets any programming (examples: PHP, ASP, ColdFusion, but not HTML) and then passes this on to the Web server.
Another important piece is the database server. This is where your data is typically stored. Examples here are MS SQL Server, MySQL, and Oracle.
