Move Joomla test site to live site

I have a question about how you would go about syncing your test and production sites databases -- if that's even possible. For instance, I have a blog on the site and people comment on it. I am redesigning stuff on the test site, so what happens to those comments when I move the test site to the production site?

Will the test sites database overwrite everything on the production site?

Is there a certain procedure I need to follow to move from test site to production site?

Right now the test site is being hosted on another server. I basically copied the entire production site and move it to another server so I can work on it. My major concern is for the data that is added to the live site during the time of my updating on the test site. For instance, what if my authors add new blob posts on the live site? What happens to those?

How do other major sites keep their production site's content when they move from their test site to their live site?
