The other way is to have to mailboxes, configure the second mailbox to forward all email to the first mailbox.
Give the user full mailbox rights to the second mailbox and then use the "From" line to second email from the second address.
All email will be stored in the first mailbox, including sent and received items.

Nope.
When using Exchange it will always send email out using the Primary SMTP address.
You could create a different mailbox that has the 2nd address as the primary address. Then on the users workstation create another Outlook profile pointing to the secondary mailbox. Configure Outlook to prompt the user to select a profile when opening Outlook.
