Ontrack Power Controls will allow you to extract data from an Exchange database without it being mounted. As far as I know this is the only product that can do this.

I may be mistaken but I believe the trial version of Ontrack will SHOW you what the full version will be able to extract.
Your only other recourse is to build a "recovery server" that is identical to the original Exchange 2000 server/AD. See if this helps:

If you still have the logs, .mdb and .stm databases then you can build a recovery server, mount the databases and use ExMerge to get the mail out. You can follow the steps in this article to build the recovery server: http://support.microsoft.c
PS This will not work if the databases are from a server that was a cluster member. There is a separate procedure for that. Once the recovery server is built place the databases and log files in a location accessible by the server. Once the database is mounted you can then ExMerge the mail out to PST files.

Do you have the transaction log files as well or just the .EDB? Do you have the .STM?
