Exchange logs nothing on its own.
Best practises? They probably don't exist.
The logging I do depends on the client requirements and the load the server is under.
It also depends on whether the server has problems or not.
Log too much and you get drowned.
Message Tracking is always enabled - I usually retain 30 days, more if there is space.
When it comes to logging you need to look at what you are logging for.
You also need to look at how you manage the logs - there is no pointing logging for something that happens once a week, but you only retain the last two days because the logs are so full.

Enable Message Tracking, subject logging, also set delete logs after like 7 days (depending on your storage capacity), very handy when a mail is lost.
Use a good backup program that is Exchange Aware (Backup Exec)
Have log files on a separate physical disk from the mailbox stores.
Enable Recipient Filtering. (Important)
Use IMF on the server (it's very good and free)
Use anti-virus software on the server. and on each client as well
