I am not using Exchange 2007, but I am sure that there is an option similar to Exchange 2003.  Open Users and Computers, find the user e-mail box that needs to be forwarded and edit the user.  Find the Exchange General tab (I assume all this is still the same with 07 so if I am wrong I apologize).  Click on Delivery Options.  Choose the option "Forward to: and then choose the user who needs to receive the e-mails from this user.

safeglad - If you don't know Exchange 2007 then you shouldn't answer questions on the product. It is totally different than Exchange 2000/2003. You do not modify the settings in ADUC as ADUC does not have anything to do with Exchange user management any longer.

lkuhner - open up Exchange Management Console, then go down to the Recipient Configuration. Find the user that you want. Enter the properties of the user and choose the Mail Flow tab. Select Delivery Options and then Properties. There you can set a forwarding option.

Not that this is inbound email only - not outbound.

The other option if you have Enterprise CALs is per user journaling.

Is there a way to forword to more then 1 mailbox?  I have a support that needs to be forwarded to 3 people and it looks like I can on send it to one box.

tlaugh - this is an old question. Unlike a forum it is not possible to "bump" questions back up the list. The only people who will see your post are those that have already participated. Instead you should post your question as a new question in the Exchange Server Zone which will allow other experts the chance to see the question and respond.
