Assuming the server you've setup has at least the Hub and Mailbox roles installed.. go into the Exchange Management Console (EMC), Server Configuration, Hub Transport and then go to the Receive Connectors in the middle pane. Open the Default Recieve Connector and go to the Permissions Groups. Enable Anonymous Users. This should allow you to receive inbound mail.
