If the user has been deleted and does not exist in the exchange organization any more then the only possibility is to check in the AD and find if the user is still existing in the AD.
Another place to check would be the person who is getting an NDR message to check , there could be a possibility that this user was added as a delegate to one of the users and if people are sending mails to the user for whom this deleted person was a delegate they may be getting NDR's for those emails.
