Reconfigure outlook clients after creation of resource forest

Hi

We are currently creating a  resource forest for Exchange Server 2007 to consolidate the two exchange server farms that we have in two untrusted domains.

We have successfully created all of the one-way trusts, and moved a few trial mailboxes into the resource forest.

Is there a way to automatically configure Outlook 2003 to point at the new server? Ideally we would like to do this in a slow dept by dept migration, but realise that we may have to do a 'big bang' option.

We have tried setting a hosts file on a test machine pointing the old server name to the IP address of the new exchange server, but this resulted in a log in box being prompted for some reason.
