Remove Attachments From Incoming Emails

We have a client who recieves faxes via email, currently they are stored in a Public Folder in TIFF format. They are getting a new document scanning system, and they want to be able to store these incoming TIFF files to a folder on the server, for file access. Does anyone have a way of doing this either with software or with a script. All the faxes are sent to one email address, so this should make it easier.
