to set up RPC over HTTPS, however, I suspect that when I entered the external FQDN mentioned above, it may have created problems, because when I try to connect to my exchange server from an outlook client, it rejects using the .com/exchange for an exchange proxy server, it appears that it has to be in the mail.x.x.com format.
My question is this: How readily can I undo the damage, and how do I set up the DNS (either on my 2k3 server or with my web host, or both) such that mail.mysubdomain.mydomain.

Have you tried just using https://mysubdomain.mydoma in.com because if you don't, you may run into problems with your ssl certificate?
