What are the risks of having ports 25 and 143 open on your firewall?

I have pinholed ports 25 and 143 on our firewall so traffic goes to our Excahnge 2007 email/web server so I could get an Iphone working with IMAP and SMTP with our exchange server, I am not using SSL.

What are the security risks around doing this?
